Grease Trap Maintenance for Commercial Kitchens: Best Practices & Compliance

The Battle Against Fats, Oils, and Grease (FOG)

In food service establishments, bakeries, school cafeterias, and restaurants, fats, oils, and grease (FOG) are the number one threat to municipal sewers and internal plumbing infrastructure. When warm grease enters drain pipes, it cools, congeals, and clings to pipe walls, eventually hardening into massive "fatbergs" that can shut down entire commercial kitchen operations.

Grease interceptors and hydro-mechanical grease traps are legally mandated devices designed to slow down greasy wastewater, allowing lighter FOG to float to the surface while food solids sink to the bottom.

The "1/4 Rule" for Pumping Frequency

Nearly all municipal environmental protection and wastewater sewer ordinances enforce the 25% Rule (1/4 Rule): Whenever the combined depth of floating grease and settled food solids reaches 25% of the trap's total liquid capacity, the interceptor MUST be pumped and cleaned immediately. Exceeding 25% causes grease to escape into the city main, risking heavy municipal fines or mandatory business closure.

Daily Staff Best Practices in the Kitchen

  • Dry-Scraping Dishes: Direct all kitchen staff to scrape leftover grease, gravies, and sauces into the trash with a rubber spatula before washing dishes in the three-compartment sink.
  • Install Drain Baskets & Strainers: Maintain fine mesh strainers over all sink drains to prevent food solids from entering the interceptor.
  • Never Pour Hot Water or Degreasers to "Flush" Grease: Chemical degreasers only emulsify grease temporarily; once the mixture cools down the pipe, it creates a massive rock-hard blockage in the main line.
